Roasted Tomatoes with Garlic, Rosemary, Thyme and Lemon
Light, Fresh, Vibrant and Refreshing. A dish with every excuse to savor weekly.
The Recipe:
What weโll need:
4 medium organic tomatoes ๐ ๐ ๐ ๐
8 cloves garlic (or one whole med bulb)
1 tsp organic fresh thyme ๐ฟ
1 sprig organic fresh rosemary ๐ฟ
3 T organic olive oil
1/2 tsp freshly cracked black pepper
1/2 lemon (freshly squeezed juice)
1/4 tsp salt of choice (Kosher, Celtic, Sea Sat, etc.)
What weโll do:
For this recipe you can use a Dutch oven dish, 2-inch lip baking sheet, or even use this recipe on the stovetop with a deep-well skillet. ๐ฅ
Preheat oven to 425 degrees
Coat cooking dish of choice with 1 T Olive Oil evenly coated
Slice Tomatoes in half horizontally and arrange evenly around baking sheet or other surface with the cut-side facing up ๐ช
Peel garlic and slice in halve vertically; remove thyme leaves from stem; cut rosemary sprig into 2-4 distinct portions (about 2-3 inches long)
Add garlic, thyme, rosemary, salt and pepper atop sliced tomatoes evenly distributed
Drizzle remaining 2 T Olive Oil over seasoned sliced tomatoes
Bake for 15-20 minutes until tomatoes are tender, juicy and tops have slightly browned and skins have cooked soft and tender
Remove from oven heat or other cooking method and squeeze fresh lemon juice over the entire dish; ๐ remove rosemary sprigs (you might steep these in boiling water later for evening tea)
This dish can be served with a bright crisp salad, Veggie noodles like Zoodles, alongside fresh bread, ๐ฅ quality cheeses, yogurts or even blended as delicious soup. ๐ฅ
Personally, I love making varieties of this dish and topping with a couple heads of raw, freshly fine chopped broccoli ๐ฅฆ๐ฅฆ or cauliflower for even more vegetable goodness I can fill up on.
Itโs like eating one of the most delicious pizzas in a veggie-bowl!
